Cashew Butter Brownies


1/3 cup spectrum shortening

1/2 cup oats

1 can chickpeas or cannellini beans, drained and rinsed

1/2 cup maple syrup

1/3 cup cocoa

1 teas vanilla

1 teas baking powder

1/2 cup cashew butter mixed with 2 Tbs powdered sugar, set aside for topping


Mix it all up, except cashew butter mixture, in a food processor until smooth. Spread in lightly oiled 8×8 pan. Swirl onto top the cashew butter mixture. Bake for 20 to 30 minutes at 350.


Chocolate Pudding

1 can black beans (or 1 3/4 cup cooked), drained and rinsed
1/3 to 1/2 cup maple syrup
4 TBS cocoa powder
1 teas vanilla

Mix in food processor for 2 to 3 minutes. Serve or refrigerate. Makes 2 servings.
